The 10 Minute Chocolate Pudding (Eggless)

I know I haven’t been posting off late… It’s only because the heat makes me super lazy..β˜€οΈπŸ˜° I stay out of the kitchen as much as I can! I have been cooking fuss-free food and that’s just about it. And as for desserts…I had some store bought sweets sitting in my fridge so the Mr. was happy. Β 
And coming to me…I just need cold and chilled drinks to keep me happy…so made my Tropical Iced Tea 3 times in a row this last week! It felt so good sipping on these.. ☺️ you guys should definitely give it a shot!Β 

But then the other day..I realised that’ve have ran out of sweets,,, and there was no dessert!😱 Now..that would be a problem as my hubby has a bit of a sweet tooth and likes to have a bite or two something sweet and delicious post his meals…😘 and I love to indulge him. So I thought of making something easy and quick so that I’d be out of the kitchen in no time! 😜 searched the net…and found it here …it’s adapted from there. And since I took a little more time to have it done, so it’s my 10 min Chocolate Pudding.

This is so easy to whip up… All the ingredients are easily available in our pantries..plus it’s eggless! Perfect. I love such effortless desserts. It’s silky, smooth and oh so rich without feeling too heavy on the palate. So let’s get on with the recipe…

Yield: 4-5 servings

Equipments: a medium sauce pan, a whisk, a serving spoon, measuring cups and spoons.

Ingredients:

2/3 cup sugar

1/4 cup cocoa pwd

2 cups milk

3 tbsp cornstarch / cornflour

1/4 tsp salt

2 tbsp unsalted butter

2 tsp vanilla extract / essence

Method:

In a sauce pan, add all the dry ingredients and whisk well. Add the milk and whisk once again. There should be no lumps. Set the sauce pan on medium heat and keep whisking lightly while the contents come to a bubble. You will notice the ingredients begin to thicken in 3-4 mins as we have used cornstarch. Take the pan off the heat, add the butter and vanilla extract. Whisk it lightly.

Pour it into your serving bowls / glasses and chill for 2-3 hours before serving!

Shelf life: 12 hours post cooking.
